Real Crab
Fresh real crab, for sushi eaters who prefer the real deal!
★ King Crab
Thickest & juiciest crab. Highest quality!
Salmon
Oily fish that has a mild to strong flavor along with a rich and semi-soft texture. It is very high in omega-3 and vitamin E. It contains a few essential amino acids that are beneficial to muscle repair and is considered a better alternative to meat for athletes.
Yellowtail
High fat content with a clean taste and buttery texture.
(Chef Daniels' Favorite!)
Freshwater Eel
Completely cooked (barbecued) soft, fluffy, and very flaky. Torched prior to being served.
Tuna
Simple, but robust taste. It has almost no fat, and has firm flesh. Most commonly used tuna within sushi restaurants.
Ebi Shrimp
Poached fresh shrimp. Ready to eat immediately!
★ Soft Shell Crab
Soft shell crab, served lightly fried (w/corn starch). Packaged in dozen or half dozen increments. 
Shrimp w/Heads
The head is an exotic dish often served along with the tail. The head is served fried and can be eaten whole like soft shelled crab.
Mackerel
It is very rich in oil and has a slight dry after taste. Very high in omega-3 oils and Vitamin E. Cured in salt for 3 to 4 hours and then washed with rice vinegar

Red Snapper
Fresh red snapper has a puffy flesh, is very watery, and has a delicate sweet aroma
Striped Bass
Shiny white flesh with an easily recognizable, broad-flaked structure. Mild flavor
Scallop
Species of saltwater clams. Similar to crab or lobster taste-wise but they have a firmer texture. The flavor tends to be sweet, buttery, and delicate
Octopus
It requires to be sliced very thinly, because it is tough to chew on. Slightly bland taste. Best served with side sauce (ponzu sauce recommended)
Cuttlefish
The flavor of cuttlefish is a cross between octopus and squid. They are fuller flavored than calamari but not nearly as rich as their rivals, the octopi
★ Tuna Belly (Toro)
Tuna belly is very oily and high in omega 3. The best tuna belly sushi will literally melt in your mouth. Most expensive type of tuna.
★ Sea Urchin Roe (Uni)
(Tongue shaped, orange or yellowish color) Has a strong ocean scent, very creamy, rich in flavor, yet considered a delicacy.
Tomago
A type of Japanese omelette, which is made by rolling together several layers of cooked egg. These are professionally prepared in a rectangular omelette pan
Salmon Roe
Pronounced & briny taste. Different eggs carry distinct flavor profiles—from mildly sweet to more savory, nutty, buttery flavors.
Flying Fish Roe (Red Tobiko)
Individual roes are very small, and the membrane is tougher than the salmon roe. They “pop”in your mouth when they are chewed, and many people enjoy the texture of it. It doesn’t have a strong aroma,but has a slight dry aftertaste.

Comparable to Flying Fish Roe.
